Making the Sourdough

At 8am I started making the Sourdough by first toasting the linseed in a pan and then adding water. The yeast water and some of the flour was mixed in a large mixing bowl and kneaded together and left for 30 minutes. Then the rest of the ingredients were mixed together, kneaded and left for an hour. Split into loaf sizes, kneaded, dusted with flour and left to rise on trays or a loaf tin.
