Pumpernickel

The Pumpernickel is in the oven. Near disaster averted last night after the Pumpernickel rose very quickly and started oozing from the tins, even though they were sealed with tin foil! I transferred some of the mix to 2 very small tins and sealed the tins tightly all the way round with foil. In hindsight, I think they would have been OK in the original tins but sealed very tightly. I baked the small loaves for 3 hours and I have just taken these out of the oven. They look fine. The others need another 2+ hours.
