Spelt and Barley loaves (poolish pre-ferment)

First time in a while for my breadmaking (eating up all the contents of the freezer!). Today I made spelt and barley loaves using the poolish pre-ferment. I started the pre-ferment last night (left for 12 hours) and then this morning I started baking. The first loaf is now in the oven (3.30pm) and the second will go in in 20 minutes. Time consuming, 'Yes'. Worth it, 'YES, YES, YES'.
